• Huitlacoche: the corn fungus often eaten with tortillas is pronounced wheet-lah-KOH-chay.

• Pouilly-Fuissé: Say poo-yee fwee-SAY when ordering this white wine varietal.
• Mole: Pronounced MOH-lay, it’s the thick, chocolate-based sauce often used in Mexican cuisine.
